Baby spinach with avocado, pomegranate and sunflower seeds
1 portion - 166 kcal (P: 4 g, C: 12 g, F: 12 g)
Light spiciness combined with sweetness of the pomegranate and slightly pungent taste of shallot create a perfect flavour mix. This salad is suitable as little afternoon snack or a side-dish to your dinner.
Ingredients (1 portion):
handful of baby spinach leaves (~30-50 g)
30 g of avocado
20 g of pomegranate
1 little shallot (~15 g)
pinch of orange peel and juice
pinch of lime peel and juice
5 ml olive oil
5 g of sunflower seeds (raw)
salt, pepper, chilli powder
Salad: Mix spinach leaves, chopped avocado, pomegranate and seeds.
Dressing: Mix olive oil with a pinch of salt, pepper and chilli. Add lime and orange juice and peel and mix with chopped shallot.
