Baby spinach with avocado, pomegranate and sunflower seeds

Light spiciness combined with sweetness of the pomegranate and slightly pungent taste of shallot create a perfect flavour mix. This salad is suitable as little afternoon snack or a side-dish to your dinner.

Ingredients (1 portion):

  • handful of baby spinach leaves (~30-50 g)

  • 30 g of avocado

  • 20 g of pomegranate

  • 1 little shallot (~15 g)

  • pinch of orange peel and juice

  • pinch of lime peel and juice

  • 5 ml olive oil

  • 5 g of sunflower seeds (raw)

  • salt, pepper, chilli powder

Salad: Mix spinach leaves, chopped avocado, pomegranate and seeds.

Dressing: Mix olive oil with a pinch of salt, pepper and chilli. Add lime and orange juice and peel and mix with chopped shallot.
