Italian style chicken with white quinoa

540 kcal (P: 43 g, C: 25 g, F: 26 g)

Ingredients:

  • 40 g white quinoa (uncooked)

  • 150 g chicken breast

  • 30 g mozzarella (low fat)

  • 10 g green pesto

  • 3 slices of tomatoe (or you can also add dried tomatoes)

  • 10 ml olive oil

  • salt, pepper

  • chicken seasoning (optional)

Procedure:

Cook quinoa according to the guidlines (you may add vegetable bouillon to give it nice taste). Cut the breast halfaway, so that it can be filled and fill with pesto, slices of mozarella and tomatoes. Roast it on a tablespoon of olive oil, 3 min from each side (unless brown), sprinkle with salt and pepper (or preferred chicken seasoning) and bake at 170°C for around 20 min. Bastle with water to preventit from burning on. Make sure the meat is fully done before serving.
