Fresh chicken salad with pear, cranberries and parmasan cheese

  • 435 kcal (P: 41 g, C: 24 g, F: 17 g)

  • Ingredients:

  • 150 g chicken breasts

  • Salad leaves

  • 50 g cucumber

  • 70 g pear

  • 50 green bell pepper

  • 10 g cranberries (dried, nonsulphurized, preferrably naturally sweetened e.g. with apple juice)

  • 10 g parmasan cheese

  • 10 g walnuts (optional)

  • 30 - 40 g yogurt (2% of fat)

  • Herb seasoning (e.g. Herbes de Provense), salt, pepper, garlic

  • Procedure:

  • Chop the chicken breast into pieces, season with salt, pepper and herb seasoning  and roast on a drop of olive oil. Chopp the salad leaves, cucumber, pear, bell pepper and mix it all together. For dressing, mix yogurt with few drops of water, garlic and favorite dresing seasoning (or use the herbs and salt again). Finally add everything together and sprinkle with cranberries, walnuts and parmasan shavings.
