Zucchini cake

1 piece - 120 kcal (P: 7 g, C: 8 g, F: 4 g)


I love baking with vegetables such as zucchini or carrot. Sounds weird, I know! But believe me the only effect the vegetable has is that it makes the cake juicy and considerably decreases the amount of calories.

Ingredients (8 pieces):

  • I zuchcini ~200g (shredded)

  • 2 eggs

  • 40 g of oats

  • 30 g of nut flour (cashew or almond)

  • 30 g of vanille protein powder

  • vanille aroma

  • 1/2 banana (~60 g)

  • 1 teaspoon of baking powder

  • 80 ml milk (cow, soya or almond)

  • strawberry marmelade (low sugar, high fruit content) and skyr or soft cheese for decoration

Separate the yolks from whites. Mix yolks with the protein powder and milk. Add peeled and roughly shredded zucchini, mashed banana, few drops of vanille aroma, oats, nut flour and baking powder. Whisk the whites and carefully blend them in the mixture.

Bake arounf 30 min on 170°C. 

Before serving top with marmelade and a table spoon of skyr or soft cheese.
