Protein pancakes

Protein pancakes are my favorite breakfast. The preparation is so easy and quick and the result is not only delicious but also boosts your protein level right at the beginning of the day...

Ingredients:

  • 50 g of favorite pancake mix (unflavoured)*
  • 1/2 banana

  • 5 g Matcha tea powder

  • 50 g strawberries

  • 10 g strawberry marmelade (low sugar, high  fruit content)

  • 60 g soft cheese or Skyr


Mix the pancake powder with water and add mashed banana (banana adds nice sweetness and also makes the pancakes beautifully puffy). Add Matcha powder into the mixture (or you can also add coca powder, maple syrup or cinamon..just experiment and choose your preferred ingredients)...

Fry the pancakes dry or on a drop of oil (olive, coconut, sunflower...), spread with marmelade, soft cheese and decorate with strawberries.

*I am using Myprotein pancake mix. I really like that one but  I always go for the unflavoured alternative...from my experience the flavoured ones usually offer very artificial taste plus you can always tailor the unflavoured mix to your own tastes ;-)
