Red kidney bean muffins

1 piece - 110 kcal (P: 9 g, C: 10 g, F: 3g)

Ingredients:

  • 1 egg

  • 1 can of red kidney beans

  • 200 g cottage cheese

  • 30 g chocolate protein powder

  • 20 g cocoa powder

  • Splash of milk

  • 10 ml maple syrup or 3 dried dates (or other preferred sweetener)

  • Favorite fruit and skyr or soft cheese for decoration

Procedure:

Mix all ingredients together until you get smooth mixture. Bake on 200°C for 20-30 minutes. Once muffins are ready and cooled down, you can decorate them with skyr or soft cheese (as I did), you can also add thin layer of marmelade or nut butter (just don't forget that these goodies add calories :)) Enjoy delicious breakfast or nice snack for your coffee break !
